{"id":669,"date":"1999-09-23T12:00:49","date_gmt":"1999-09-23T10:00:49","guid":{"rendered":"http:\/\/www.risottodirk.de\/galerie\/?p=95"},"modified":"2017-03-22T11:51:29","modified_gmt":"2017-03-22T09:51:29","slug":"wirsing-gratin-mit-schafskaese-und-tomaten","status":"publish","type":"post","link":"https:\/\/www.risottodirk.de\/risottoblog\/669\/wirsing-gratin-mit-schafskaese-und-tomaten\/","title":{"rendered":"Wirsinggratin mit Schafsk\u00e4se und Tomaten"},"content":{"rendered":"<p><!--more--><\/p>\n<ul>\n<li>1 kleiner Wirsing<\/li>\n<li>1 Scheibe Schafsk\u00e4se<\/li>\n<li>2 Schalotten<\/li>\n<li>3 Zehen Knoblauch<\/li>\n<li>6 Tomaten<\/li>\n<li>Oliven\u00f6l, salz, Pfeffer<\/li>\n<li>Zitronensaft<\/li>\n<li>Ein paar Scheiben Italo-Wei\u00dfbrot<\/li>\n<li>Sahne (knapp 1\/4l)<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>Vom Wirsig die \u00e4u\u00dferen Bl\u00e4tter kompostieren, Str\u00fcnke raus und den Rest 5\u00a0min. in Salz- Zitroenen- Wasser blanchieren.\u00a0Abschrecken mit Kaltwasser.<\/p>\n<p>Wirsing in Streifen schneiden.\u00a0In einer gro\u00dfen Pfanne die kleingekackten Schalotten und Knoblauch in\u00a0Oliven\u00f6l and\u00fcnsten.\u00a0Wirsing dazugeben,\u00a0bevor es anf\u00e4ngt zu kokeln, Sahne angie\u00dfen.\u00a0Einkochen lassen, mit Salz, Pfeffer (viel! schwarz! und grob!) und\u00a0Zitronensaft abschmecken.<\/p>\n<p>Ab in die ausgebutterte Grat\u00e4ng-Form.\u00a0Scheiben der enth\u00e4uteten und entkernten Tomaten drauflegen.\u00a0Sch\u00e4fsk\u00e4se dr\u00fcber br\u00f6seln.\u00a0Da noch nicht genug Fett dran ist(?!) kippe ich noch Oliven\u00f6l d\u00fcber.<\/p>\n<p>5 Min.
